Potato Salad with Saffron Aioli

Elevating a simple summer potato salad with homemade saffron aioli.
Servings: 4-6 people

  1. Preheat the oven to 400 degrees. Slice the fingerling potatoes and add 1/4 cup oil. Add two heavy pinches of salt and some freshly ground black pepper and toss to coat. Roast for about 15 minutes until golden brown.
  2. Add the haricot vert to boiling water and boil until just tender, about 2-3 minutes. Strain and add to an ice bath to stop the cooking. Cut the haricot vert in half.
  3. To make the saffron aioli, ground a couple pinches of saffron in a mortar and pestle until you have 1/8 teaspoons of ground saffron. You can use already ground saffron, but you will get more intense flavor with threads of saffron that you grind. Steep the ground saffron in 2 tablespoons of hot water.
  4. Add 3 egg yolks to the Vitamix Aer Disc container. Add the steeped saffron, 1 tablespoon of lemon juice and minced garlic. Run the Vitamix on low speed for about 15 seconds. Remove the plug off the lid and slowly add 1 cup of oil in a small thin slow steady stream, increasing the speed as the aioli emulsifies. Add a large pinch of salt at the end. Alternatively, you can whisk the egg yolks, lemon juice and garlic together and with another hand stream in the oil while whisking the egg yolks with the other.
  5. Toss the fingerling potatoes in about 1/2 of the aioli another 1 tablespoon of lemon juice. Add more aioli if you need more to evenly coat the potatoes. Taste a potato and add more salt if needed. Serve the potatoes on a platter and add the haricot vert, raddichio, radishes and dill. Serve the remaining saffron aioli on the side.

I’m excited to make lots of summer salads — fruits, pastas, potatoes, anything!

I am excited for vine-ripe tomatoes, warm peaches from the trees, and lighting up the grill as often as possible!

I am enjoying all the recipes inspired here and will definitely be trying this salad. Thanks for sharing your work!

Excited to make smoothies this summer! A Vitamix would be perfect since I’m going back to school!

I can’t seem to find enough ways to eat fresh fruit during these hot days!

Well, this, for one because dill and saffron is an excellent combination! (And this would be a perfectly timed score because my old blender just died.)

I’m always on the lookout for a nice, healthy potato salad & this hits the spot! Thanks!!

I’m all about blending smoothies, juices, nice creams, salad dressings & pesto!! ♥️♥️

I’m really excited about smoothies with strawberries and blueberries we’ve picked ourselves.

Interesting recipe – maybe even try blending it into potato cakes/fritters. With a Vitamix, there would be many fun options. I’d definitely blend many summer fruits into smoothies, as well!

This potato salad looks absolutely delish! I am looking forward to making twice baked zucchni and avocados! 😀

This recipe looks so good, thanks for the post.
I have a Vitamix that I love, interested in this new attachment.

I always make German potato salad but this looks like a good replacement!

I am excited to make a watermelon and pineapple sangria at the beach!

This Summer I want to make fruit, breakfast smoothies and other juices in a Vitamix!

I’m excited to make some fresh salads like the Grilled Green Bean Salad!

This summer I’m loving new salads and I want to make an icebox cake!

I’m excited to make a smash cake for my son’s first birthday next month!

I just bought the cutest vintage popsicle molds. Would love a vitamix to put them to use!

Love, love, love the vibrant colors of this potato salad!
I’m looking forward to making all kinds of dipping sauces, herb oils, and pestos to accompany grilled veg and meat — they make each meal special.

This summer, I can’t wait to make a strawberry rhubarb pie! Luckily, I froze some rhubarb when it was in the markets, and now the in-season strawberries are extra tasty.

I’ve been following your recipies for several years now, and they always make me dream!! Saffron aïoli is a provençal specialty called « rouille » and it’s traditionally served with fish soup!
Kisses from France

This summer I’m looking forward to making chunky chicken salad and (cold) Spring Pea Soup.

I am excited to make lots of picnic food. Salads, pasta dishes, vegetable dishes. We try and take a picnic 3 times a week to share with friends while we watch amazing concerts in the park in Chicago.

I want to try making my own nut milks and some more adventurous iterations of pesto (broccoli rabe pesto, arugula pesto, etc!).

I can’t wait to try making my own coconut yogurt and mix in some Summer fruit!

I’m excited to make smoothies using all the fresh fruit. I’m also looking forward to lots of grilled fish & seafood.

I’m thinking Dukkah inspired dips, sauces of blended fresh peppers and herbs from the garden, spicy Thai inspired chimichuri with plenty of Thai basil, and tahini sauces for grilled veggies, mmmm! Thanks for all of your beautiful inspiring recipes and tips, LOVE your site!!

Would love to use the Vitamix to make smoothies and popsicles to stay cool in DC!

This potato salad will pair perfectly with the grilled salmon I am making tonite!

I’m excited to grill some fish while on vacation. I’m also excited to try this salad.

Summer cooking is the best! The next thing I’ll be making is peach crisp ice cream. So good!

I’d love to make nut milk in the vitamix so i can have all the iced matcha latte..right now, my blender sucks 🙁

I’m super excited to make spumoni. Softened vanilla gelato, a handful of toasted almonds, dark cherries, and a splash of amaretto go into the blender for a quick whiz to combine the flavors. Then I layer it in a loaf pan with pistachio and chocolate gelati, (freezing between the addition of each layer) and top with amaretto-spiked whipped cream. After a final hour in the freezer, slice and serve. It’s heavenly.

Nothing says summer like fresh peaches with buratta drizzled with a arugula pesto (made in a Vitamix would be perfect!) and finished with a little bit of chopped pistachios.

I’m excited to make the Stone Fruit Salad recipe you guys wrote about last summer! That was my go-to salad last summer and I’m excited to make it again now that the fruits are back in season:)

I would love to try this beautiful recipe as well as raspberry ice cream.

Love cooking fresh summer vegetables! Black-eyed peas, squash, corn. All from the garden!

I loooove potato salad! But I’m mostly excited to eat all the farmers market tomatoes in basically everything.

I am excited to make caprese salad!!!! I want to eat all of the tomatoes!!!

I’m really excited to cook few recipes from “One Good Recipe” by David Tanis, like Egyptian Breakfast Beans, Rice Porridge with Salted Egg! I’m Japanese, so I make a lot of rice porridge, and having a good blender is really nice, so I can shorten cook time. Also, I’m absolutely going to try your recipe too! Saffron Aioli sounds so good 🙂

Summer produces the best produce. I’m excited to be making dishes with zucchini, corn, tomatoes, peaches, watermelon, cherries, nectarines, berries…the list goes on!
