One of the duties of a bartender is coming up with the perfect drink for a customer who can’t make up their mind. One night behind the bar, a regular of mine came in raving about a new spirit he’d tried that weekend: Demerara rum. Native to Guyana, Demerara rum has a particularly earthy, almost burnt flavor – perfect for cocktails. I quickly grabbed my mixing glass, some go-to mixers, and out poured the Georgetown. This cocktail packs a punch, with earthy, smoky, bitter and floral qualities all rolled into one. Needless to say, I’ve made (and sipped on) quite a few of these in my day.

Georgetown Cocktail

This cocktail packs a punch, with earthy, smoky, bitter and floral qualities all rolled into one.
Servings: 1 cocktail

INGREDIENTS

INSTRUCTIONS

  1. Add all three ingredients to your mixing glass. Fill with ice and stir for a full minute.
  2. Strain into a cocktail glass and garnish with an orange twist.

Just made this with Pyrat XO. Only had regular bitters but there is so much orange flavour in the Pyrat, I still think all the flavours are there.

I was best man at a wedding two years ago and the groom gave me a bottle of El Dorado … it kept us company while I finished my 2nd record, Cosmicology … long story short … I wish you guys had existed then cause that was one of the best bottles I’ve ever tasted (real school Havana Club aside) … and this would have been the move! Looks like I’m gonna have to buy another bottle cause I’m salivating. ps. do you think this could work with Sailor … or I gotta step it up? thanks and again, sick pics!!! what a spread!

What a wonderful way to use rum in a cocktail. I love seeing it in such a classy cocktail like this- must try very soon!

The color is incredible! it has this hue that feels warm and smooth but at the same time crisp and bright.

Have lots of ages of El Dorado and XM Rum from my native Guyana. Never heard of The Georgetown, but I will try it. My hubby likes his ‘older girls’ (i.e 15, 20 and 25 year old Guyana rums) on the rocks 🙂 Yes, great photos indeed!

Jamaican rum would definitely work. Actually often very similar in style to Demerara.

I am a big fan of rum so I am really excited to try this one out. I usually don’t get too fancy with my cocktails but this looks easy enough that I should be able to make it without creating a huge mess! Gorgeous photos too!

In spite of the fact that I’m not a huge rum fan, you sold me on the smoky flavors. Can’t wait to hit up my local mixologist to make me one. The photographs in your blog are excellent by the way. Love this site!

This is not my cup of tea, but would be great to make for my husband. The flavors described are right up his alley. Can’t wait to make this for the guys at my next dinner party!
