Spring is here and I wanted to celebrate with a simple cocktail that evoked the mood of the coming months. This prohibition-era classic has bright, crisp flavors, perhaps originally intended to mask the harshness of inferior gin. Fast forward to present day – this cocktail still makes for smooth sipping. In fact, it’s often billed as the gin drink for the non-gin drinker. Adding lavender highlights the floral notes of the honey without compromising the spirit of this timeless cocktail.

Lavender Bee's Knees

This prohibition-era classic has bright, crisp flavors, and often billed as the gin drink for the non-gin drinker.
Servings: 1 cocktail

INGREDIENTS

Lavender Honey Syrup

INSTRUCTIONS

  1. Combine all ingredients in a shaker full of ice. Shake vigorously for 10 full seconds. Double strain into a cocktail glass and garnish with a lavender sprig.

Lavender Honey Syrup

  1. Combine hot water with honey and stir until evenly mixed. Add lavender, stirring to combine. Let cool, approximately 30 minutes, then pour through a fine mesh strainer to remove lavender.

I’m not a gin girl, so I did my research on gins before I made this. I bought a French gin that isn’t so heavy on the juniper. I did back off on the lemon just a bit. This is simply delightful. It is a great girls night in cocktail or a summer sipping cocktail. Thank you so much for sharing this recipe!

My son made this for me recently. It was delicious! The perfect summer sipping/lounging drink.

I tried this by substituting some Lavender Monin and actual honey for the lavender honey syrup. It ended up being too sweet (the Monin Lavender syrup is very sweet itself). So naturally, I had to add some gin and then I added some egg white and a spoonful of crushed ice and then blended it and poured into a frozen cocktail glass. That’s better!

Hello, I love gin, there are so many different types so which one would you recommend. And herbal gin or a dry gin?

I enjoyed this recipe but the ratios seemed off to me. As written the lemon juice completely overwhelmed the other flavors and I could not taste the lavender syrup. I over doubled the syrup and everything came together without being too sweet. Thanks for the lovely cocktail!
