I have a confession. I’ve never rolled my own sushi before. I think my motivation to learn has always been deterred by my utter delight in going out for sushi. My go-to is always a generous assortment of sashimi and if I’m at my local spot, I always order one extra special item: a salmon ceviche roll. There’s something about the addition of vibrant cilantro and spicy jalapeño to the citrus cured salmon that makes this combination so clean and deliciously explosive! It was just a matter of time before I committed myself to recreating it in temaki form. Because 1) I need it on demand and 2) hand rolls is the easiest way to ease into sushi making. One step at a time, right?

SALMON CEVICHE TEMAKI (HAND ROLL)
Ingredients:
- 1 cup sushi rice
- 1lb sashimi grade salmon
- 10 roasted nori sheets, cut in half
- 1 tbsp mirin
- 1 tbsp sugar
- 2 tbs salt
- 1 large bunch of cilantro, washed and trimmed
- 3-4 jalapeños, seeds removed and julienned
- 2 avocados, sliced
- juice of 2 lemons
- juice of 1 lime
- juice of 1 orange
- 2 tbs tamari or soy sauce, plus extra for dipping
- wasabi
Directions:
- Wash rice repeatedly until the water runs clear.
- Boil with 1.5 cups of water, cover and then simmer for 20 minutes.
- Dissolve sugar, 1/2 tbsp of salt and mirin and pour over the rice. Fold into rice with a wooden spoon and allow to cool before rolling.
- Meanwhile, cut the salmon against the grain into 1 inch slices.
- Combine citrus juices and 2 tbsp of salt in a large bowl. Marinate the salmon into the citrus for 20-30 minutes.
- Place a half sheet of nori on a flat surface. Keep a fresh bowl of water nearby to wet your hands to handle the rice.
- Spread about 3 tbsp of sushi rice and spread it evenly on the left side of the sheet so that it covers about a third of the nori.
- Lay the avocado, jalapleño, cilantro and salmon ceviche on the rice.
- Fold up the lower left corner of the nori and while tucking tightly, roll into a cone shape.
- Seal the roll with a few grains of sushi rice.
- Serve with soy sauce and wasabi and eat immediately!
I mean, if it gives you sushi on demand I say the hand roll is worth it every time! these look delicious
