Baked Ricotta Dip

I’ve been eyeing baked ricotta dip recipes for a while now. They look so rich yet easy to make. But this version was made totally over-the-top-decadent with the addition of truffle honey. I bought a small jar out of curiosity and Instagrammed a photo, asking our followers how they would recommend using it. Thanks to all the suggestions I got, this amazing creation resulted! The entire thing is sweet, savory– a little salty, smooth, crunchy . . . and just amazing. I also suggest getting the freshest ricotta possible or make your own (which is very easy!).

Baked ricotta dip

Ingredients:

  • 1 1/2 cups of fresh whole milk ricotta
  • 1 large egg, room temperature
  • 1 1/2 tablespoons of parmesan cheese, shredded
  • unsalted room-temperature butter for greasing
  • sea salt
  • freshly ground black pepper
  • 1 loaf of fresh baked bread
  • extra virgin olive oil for brushing
  • 2 sprigs of fresh thyme
  • truffle honey (it is pricey, but a little goes a long way)
  • crushed pistachios

Ricotta dip ingredientsPreheat the oven to 400 degrees with the rack set on the middle-upper level. Start by liberally greasing two small ramekins or one small baking dish with butter. Line the inside with parchment paper so that when the ricotta rises past the ramekin it doesn’t spill over. I do this by cutting triangle corners from the parchment paper and laying one edge of the triangle in the inside edge of the ramekin.

In a medium bowl, combine ricotta, egg and parmesan, and 1/8 teaspoon of sea salt. Spread the ricotta mix into the buttered and parchment-lined ramekins or baking dish up to about two inches deep.

Sprinkle the top with a little freshly ground black pepper. Place ramekins or baking dish on a baking sheet and bake for 15-20 minutes until the tops start to brown. You can overbake this so if the tops aren’t brown enough to your liking, brown the dip under a broiler for a minute or so. Avoid baking longer than 20 minutes. Brush sliced bread with olive oil and sprinkle with salt and pepper on both sides. Toast on a pan.

Garnish the ricotta with thyme leaves.

To serve, smear warm ricotta on a toast and drizzle with truffle honey.

Made this last night – Everybody loved it especially the Foodies. I used both the truffle and wildflower honey as my husband isn’t a fan of truffle. It was fun to share a dish no one had tried before. I’ll be making this again

I have truffle oil and honey, I’m thinking that I can sub these 2 for the olive oil and the truffle honey….

I was quite excited but I do not have truffle oil and I wanted to make it today. I have been saving it in my browser for almost three weeks now. Today was the day. Alas, I was a bit saddened. It seemed like it was missing something. So I added a wee bit more parmesan and then some Tuscan seasonings. It helped a smidge. Perhaps the truffle oil and the pistachios would have completed it for me.

i’ve officially had this pulled up on my browser for about 24 hours now because i am just so afraid that i’m going to lose it somewhere on the internet. i plan on keeping it here until i try it later today or tomorrow. only i don’t have a cute red ramekin thing like you and i killed all of my herbs, so it’s not going to be as cute as your version.

So much YES! One of my go-to appetizers is baked ricotta topped with slow-roasted tomatoes that have been tossed with honey and thyme. You really can’t go wrong!

i adore the honestlyYUM homemade ricotta recipe (i use it ALL THE TIME!), and this recipe is a perfect extension of it!!! i love the baked ricotta idea for dinner parties! now i just have to find some truffle honey… 😀

Ah! This looks so good! I must try. I made homemade ricotta the other day and it’s such a delight. I never really understood it as a cheese until that day 🙂 x
